Line a roasting pan with foil, long enough to tent over turkey.
Heat oven to 500 degrees
Create a butter mixture, with half a stick of soft butter, add a pinch of salt and pepper, a good amount of chopped rosemary, sage and thyme. Mix together and then get ready to slather it on the turkey, go underneath the skin, by the breast, by the thigh, and then all over the skin. Layer bacon on top of breast, put half a lemon in cavity and tent foil over turkey Turn oven down to 425 degrees and place turkey in and cook for 40 minutes. After 40 minutes turn oven down to 325 degrees and cook turkey 25 minutes per pound.
When you have 1 hour left, remove the foil from the top and let breast brown, and baste turkey every 10 minutes.
Turkey is done when it reaches 165 degrees.
Take turkey out and place in dish, cover loosely with foil and towels and let rest.
Use that beautiful liquid in the pan to make gravy!
