- 10-12 inch skillet or a 9-10 inch cake pan or pie dish
Ingredients
- 1 3/4 cups *buttermilk cold preferably( can affect flavor, texture and rise)
- 1 large egg
- 4 1/4 cups organic all-purpose flour
- 3 tbsp organic raw cane sugar
- 1 tsp salt
- 5 tbsp unsalted butter, cold and cubed
- 1 cup raisins optional
Instructions
- Preheat oven to 400°F.
- Whisk the buttermilk and egg together. Set aside. Whisk the flour, cane sugar, baking soda, and salt together in a large bowl. But the butter in with a fork or your fingers. Mixture will be very thick with flour but try and get butter to small pebble sizes. Stir in the raisins. Pour in the buttermilk/egg mixture. Start using your hands to fold the dough together – work into a ball as best as you can then knead for about 30 seconds or until flour is moistened. Dough should not be too sticky.
- Transfer dough to a skillet. With a sharp knife score an X into the top. Bake until the bread is golden brown and the center appears cooked through – about 45 minutes. Place foil on top halfway through bake time.
