Roasted Tofu & Broccoli with Peanut Sauce

- 2 rimmed baking sheets
Ingredients
- 1 14 oz block Extra-firm tofu
- 1/3 cup smooth peanut butter
- 1/3 cup coconut milk
- 1 tbsp tamari
- 1 tbsp maple syrup
- 1 tbsp rice vinegar
- 1 tsp red curry paste
- 6 cups broccoli – chopped into florets
- 2 tbsp sesame oil divided
- scallions to add on top
Instructions
- Preheat oven to 450°
- Cut tofu into 1/2 inch cubes
- Whisk peanut butter, coconut milk, tamari, maple syrup, vinegar and curry paste in a small bowl.
- Toss broccoli with 1 tbsp sesame oil in a medium bowl and arrange in a single layer on one of the baking sheets. Brush the remaining 1 tbsp sesame oil on the tofu, then arrange in a single layer on the other baking sheet. Bake in oven for about 20 minutes. Remove from oven, let cool for 5 minutes and mix the tofu, broccoli and peanut sauce together and garnish with sliced scallions.

Extra-firm tofu does not have much water, but still press and drain- this helps in giving the tofu a little crispiness – what you want for this tasty dish!
