Ingredients
- 1 cucumber – chopped in quarters – bite-size pieces
- 1 green bell pepper – chopped in 1-inch pieces
- 2 cups halved cherry tomatoes
- 5 ounces feta cheese – cut into 1/2 inch cubes (or crumbled is ok)
- 1/3 cup thinly sliced red onion
- 1/3 cup pitted Kalamata olives
- 1/3 cup fresh parsley
Instructions
- Dressing: 1/4 cup extra-virgin olive oil, 3 tbsp of red wine vinegar, 1/2 tsp of garlic powder,1/2 tsp of dried oregano 1/4 tsp of dijon mustard, dash of salt and pepperI toss a little lemon juice in there – or squeeze a little fresh lemon – brings out the taste of the parsley.
- Toss everything together and serve!
