1cucumber - chopped in quarters - bite-size pieces
1green bell pepper - chopped in 1-inch pieces
2 cupshalved cherry tomatoes
5ouncesfeta cheese - cut into 1/2 inch cubes (or crumbled is ok)
1/3cupthinly sliced red onion
1/3 cup pitted Kalamata olives
1/3cup fresh parsley
Instructions
Dressing: 1/4 cup extra-virgin olive oil, 3 tbsp of red wine vinegar, 1/2 tsp of garlic powder,1/2 tsp of dried oregano 1/4 tsp of dijon mustard, dash of salt and pepperI toss a little lemon juice in there - or squeeze a little fresh lemon - brings out the taste of the parsley.
