Geek Greek Salad

Ingredients
  

  • 1 cucumber – chopped in quarters – bite-size pieces
  • 1 green bell pepper – chopped in 1-inch pieces
  • 2 cups halved cherry tomatoes
  • 5 ounces feta cheese – cut into 1/2 inch cubes (or crumbled is ok)
  • 1/3 cup thinly sliced red onion
  • 1/3 cup pitted Kalamata olives
  • 1/3 cup fresh parsley

Instructions
 

  • Dressing:
    1/4 cup extra-virgin olive oil,
    3 tbsp of red wine vinegar, 1/2 tsp of garlic powder,
    1/2 tsp of dried oregano
    1/4 tsp of dijon mustard, dash of salt and pepper
    I toss a little lemon juice in there – or squeeze a little fresh lemon – brings out the taste of the parsley.
  • Toss everything together and serve!
